MAVÙ PAS DOSÉ
The company’s first wine born from a far-sighted project that drives the native vines of the Itria Valley at the center of the production of the Classic Method.
Mavù is a sparkling wine made from 100% Verdeca, a white grape typical of our area.
With a minimum refinement of 36 months in the bottle, it is complex and at the same time elegant and easy to drink. On the nose, notes of ripe apricot, hazelnut and a light sensation of bread crust emerge.
The taste reveals the silkiness of the bubbles, freshness, flavour and a light balsamic note.

CHARACTERISTICS OF THE VINEYARD

• GRAPES USED: Verdeca
• YELD PER HECTARE: aprox 7.000 kg per hectare
• SOIL STRUCTURE: calcareous with medium texture in a hilly area at 340 m above sea level.
PRODUCTION CHARACTERISTICS
• GRAPE HARVEST: strictly by hand in crates of 12 kg each
• VINIFICATION: cooling of the grapes in a cold room at a temperature of 2°C for 72 hours, pressing of the whole grapes with a yield not exceeding 50%, fermentation of the sparkling base at low temperatures
• HARVEST: last ten days of August / first ten days of September
• TIRAGE: February / March
• REMUAGE: manual on pupitres for 3 weeks
• ALCOHOL CONTENT: 12% vol.
• FERMENTATION: in steel vats at controlled temperature
• BOTTLE AGEING: minimum 36 months
• SIZE: 75 cl and 150 cl bottles
MAVÙ PAS DOSÉ MARESCO
Mavù Pas Dosè Maresco is a prestigious sparkling wine resulting from continuous experimentation in the classic method, made from 100% white grapes of the Maresco cultivar from the Itria Valley. This wine authentically expresses the peculiarities of its terroir, thanks to a minimum 24-month bottle aging on the lees that enhances its complexity and depth.
On the nose, floral notes of mimosa and yellow rose are followed by balsamic hints and a finish of wild fennel. The savory flavor combines with a lively freshness, while on the palate it reveals an aftertaste of bread crust and melted butter.
Mavù Pas Dosé Maresco is a perfect synthesis between tradition and innovation, which stands out in the panorama of sparkling wines.

MAVÙ PAS DOSÉ VERDECA V.L.E.
From the continuous experimentation in the production of the classic method from native vines comes Mavù Pas Dosé Verdeca V.L.E. (Very Limited Edition) in a limited edition of only 750 bottles.
After a meticulous selection of the grapes and the production of the sparkling base in steel, 25% of the wine is refined in 225-litre French oak barriques followed by bottle refinement for at least 30 months.
Mavù Verdeca Very Limited Edition is a sparkling wine made from 100% Verdeca, a white grape typical of our area.
This sparkling wine is not only a celebration of Puglia’s winemaking tradition, but also a novelty in the rosé wine scene, offering a unique tasting experience that reflects the authenticity and richness of the Itria Valley terroir.

Mavù Rosato Pas Dosè is a sparkling wine made from 100% Susumaniello grapes, a red grape variety typical of the Itria Valley in Puglia. It represents a fine expression of the local terroir, highlighting the unique characteristics of the territory thanks to a minimum 24-month bottle aging, which gives it complexity and depth.
Its pale pink color, enriched with garnet highlights, hints at a fascinating and innovative aromatic profile. On the nose, notes of pomegranate and citrus emerge, with a finish of red pastry that adds an elegant sweetness. On the palate, Mavù reveals itself as fresh and savory, with a citrusy aftertaste that enhances its vivacity and perfect balance.
