GRAPES USED: Verdeca
YELD PER HECTARE: aprox 7.000 kg per hectare
SOIL STRUCTURE: calcareous with medium texture in a hilly area at 340 m above sea level.
PRODUCTION FEATURES
GRAPE HARVEST: strictly by hand in crates of 12 kg each
VINIFICATION: cooling of the grapes in a cold room at a temperature of 2°C for 72 hours, pressing of the whole grapes with a yield not exceeding 50%, fermentation of the sparkling base at low temperatures
HARVEST: last ten days of August / first ten days of September
TIRAGE: February / March
REMUAGE: manual on pupitres for 3 weeks
ALCOHOL CONTENT: 12% vol.
FERMENTATION: in steel vats at controlled temperature
BOTTLE AGEING: minimum 36 months
SIZE: 75 cl and 150 cl bottles

GRAPES USED: Maresco
YELD PER HECTARE: aprox 5.000 kg per hectare
SOIL STRUCTURE: calcareous with medium texture in a hilly area at 340 m above sea level.
PRODUCTION FEATURES
GRAPE HARVEST: strictly by hand in crates of 12 kg each
VINIFICATION: cooling of the grapes in a cold room at a temperature of 2°C for 72 hours, pressing of the whole grapes with a yield not exceeding 50% and fermentation of the must at low temperatures. 25% of the wine is refined in medium-toasted French oak barriques, subjected to malolactic fermentation and in tirage is added to the mass refined in steel.
